Bacon Peanut-butter Cookies

Back in this post, I threatened to make Bacon Peanut-butter cookies. I just made them now, a month later. Rene was not supportive of this little experiment, to say the least. However, she's up at some friends watching the Seahawks, so I'm left to my own devices. She did tell me to make some cookies. :)

Here's the process: take enough cookie dough for about 8 cookies, and add 5 pieces of bacon. I tore the bacon up to under 1/2 inch pieces, then mixed the bacon thoroughly by hand. Kneading the bacon into the dough was wonderfully tactile, even with the plastic gloves on. Very soothing.

Then I made balls of dough, about 1 1/2 tablespoons each, and popped them into our convection oven at 300 degrees for 15 minutes. That's parchment paper on the baking pan, and the light cookies on the left are sugar cookies.

The cookies looked great, you really can't tell that they have bacon in them from the appearance. Now for the ultimate test: tasting! I'm happy to say that the cookies were very good. The bacon made them chewy, and offered a nice counterpoint to the peanut butter flavor. I gave some to a few customers, and they liked them too. One customer doesn't really like peanut-butter cookies, but liked these, and another isn't adding these to their list of favorites, but is happpy to know another thing that bacon tastes good with.

Overall, I'd say that the bacon peanut-butter cookie experiment was a success, and now I'm thinking of other cookie mixes to which I can add bacon. If you'd like a bacon peanut-butter cookie, stop by and I'll give you one, while supplies last.

I liked them, I'll send you my recipe for breakfast cookies, they have bacon, cheese and oatmeal among other things! ( I even made them for coffee hour at church and they were well received!)
